Ingredients for Artichoke stew with dill herb.
4 portions
- 600gr of artichokes
- 4 medium potatoes sliced in medium pieces
- 4 carrots sliced in rounds
- 1 chopped onion
- ½ bunch of dill
- Salt and pepper
- Olive oil
- 1 ½ lemon juice
- 1 tablespoon of corn flour or 1 tablespoon of flour
Method
In a pot add the olive oil, the artichokes, the potatoes, the onion and the carrots. Then sauté for a while in strong fire.
Fill in with water until you cover the food. Add salt and pepper. When the artichokes are boiled, reduce the temperature of the fire.
Boil for about 45 minutes and add some water if needed.
Give it a taste to check if you want to add more salt and then add the dill. Keep boiling for 5 minutes.
When our vegetables are ready and our food is hot in its juices, remove it from the fire.
In a small bowl add two tablespoons of the juice of the food, add the corn flour and stir with a fork until it is well dissolved. Add also the lemon, stir for a while and pour the content into the pot.
Boil for 5 minutes until the juice thickens.
The meal can be combined with a slice of crispy saganaki cheese.
