Recipe for Chargrilled Salmon with Asparagus. A delicious meal with a high nutritional value and few calories. Both, salmon and asparagus contains many vitamins.
Ingredients for chargrilled salmon with asparagus
- 2 fillets of fresh salmon
- 300 gr. asparagus
- 1 tsp of lemon zest
- Freshly ground pepper
Ingredients for Greek olive oil and lemon dressing
- 1 pinch of oregano
- ½ cup of lemon juice
- 100 gr. of olive oil
Wash and season the salmon with salt, sprinkle with the lemon zest and put in the fridge for about 20 minutes.
Trim the ends of the asparagus, cut in half and boil in salted water for 10 minutes. Make sure that the fire is lit already to form ember.
When the fire is ready, place the salmon for 3 minutes on one side and 3 on the other side. You want to achieve a medium roasting to keep the salmon juicy.
Serve the Chargrilled Salmon in a large shallow dish and garnish with the asparagus, pour the lemon/oil dressing and add freshly ground pepper.
For the olive oil lemon dressing:
In a bowl, whisk the oil, oregano, and the lemon juice. If you wish to have a creamier dressing, you can blend everything in a multi.
If you don’t have a charcoal barbecue, cook your salmon on the grill or a nonstick pan.
