Drunken chicken with veggies

Ingredients for a drunken chicken with veggies

5 servings

  • 2 chicken breasts
  • 1 courgette, cut into small pieces
  • 1 red florina pepper
  • 1 Greek golden pepperoncini
  • 150 gr. of white mushrooms cleaned and cut into 4 pieces.
  • 1 glass of white wine
  • Salt-Pepper
  • ½ cup of olive oil

Method

Follow the steps to cook the drunken chicken with veggies:

Wash and cut the peppers into round slices or match sticks (julienne).

Cut the chicken into small chunks, season with salt and pepper, and place over a big frying pan or a pot.

Add the oil and saute over high heat. As soon as the chicken gets some color, lower the heat, add the vegetables and continue to saute for a while.

Next, finish with the white wine. Let stand for a while and supplement with 1 cup of water.

Cook for 15 minutes over low heat.

Once the chicken is done and the sauce has thickened, remove from the heat.

Serve with french fries or rice and a chilled beer.
