Rooster in red wine sauce

Ingredients for Rooster in red wine sauce

6 portions

  • 1 rooster, cut into chunks
  • 2 big white onions
  • 3 ripe tomatoes
  • 2 cinnamon sticks
  • 1 glass of red wine
  • 6-7 allspice berries
  • 50 gr. tomato paste
  • 100 gr. olive oil
  • Salt
  • Pepper
  • Pinch of sugar


Wash and rinse your rooster, peel off and finely chop the onions and grate the tomatoes.

In a pot, pour the olive oil and saute the rooster over high heat. Add the onions, the tomato paste,  salt, pepper, allspice and cinnamon. Once all our ingredients are sauteed well, add the wine.

As soon as the wine evaporates, add the tomatoes and the sugar. Finally, pour in 2 cups of water and cover the pot with a lid.

When it comes to a boil, lower the heat and simmer the food without any stirring for 1 hour and 30 minutes.

As the rooster is done and the sauce has thickened, take off the heat.

Serve with a pasta of your preference or with french fries.
