The recipe for spinach rice. It is not only a cheap and easy to make food but also nutritious and healthy. It is appropriate for vegetarians, vegans and more.
Ingredients for spinach rice with tomato
- 1 kilo of spinach
- 1 big, chopped onion
- 3 small, fresh onions
- 1 ½ cup of Carolina rice
- ½ bunch of dill
- 1 lemon
- 1 tablespoon of tomato paste
- Olive oil
Clean, wash and cut the spinach in two or three pieces (it depends on the size of the spinach).
Peel and chop the big onions, the small fresh onions and the dill.
In a pot add the olive oil, the big onions, and the small fresh onions. Sauté them in medium fire and add the spinach, the salt and pepper and the tomato paste. Stir well and, when the spinach dries, pour 1 ½ glass of water.
When it starts boiling, pour the rice. Boil for about 10 minutes in weak fire, add the dill, stir and keep cooking for 15 more minutes until it absorbs its fluids and the rice becomes soft.
When the spinach rice is ready, remove it from the fire and pour the lemon juice.
Leave it for 5 minutes and serve with feta cheese, olives and fresh bread.
