Reserve 1\/2 cup of the pasta water before draining.<\/li>\n<li><strong>Prepare the bacon and mushrooms<\/strong>:\n<ul>\n<li>Heat the olive oil or butter in a large pan.<\/li>\n<li>Saut\u00e9 the bacon until crispy (about 5\u2032).<\/li>\n<li>Add a clove of minced garlic and<\/li>\n<li>Add the mushrooms and saut\u00e9 until softened and golden (about 3\u2032).<\/li>\n<\/ul>\n<\/li>\n<li><strong>Prepare the sauce<\/strong>:\n<ul>\n<li>In a bowl, whisk together the eggs and heavy cream.<\/li>\n<li>Add the grated kefalograviera and mix well.<\/li>\n<li>Season with salt and pepper (be cautious with the salt, as the kefalograviera and bacon are already salty).<\/li>\n<\/ul>\n<\/li>\n<li><strong>Combine everything<\/strong>:\n<ul>\n<li>Drain the pasta and add it to the pan with the bacon and mushrooms. Toss well to combine.<\/li>\n<li>Remove the pan from the heat and pour in the egg and cheese mixture.
