Despite the fact that I come from the region of Messinia, I have to admit that the region of Roumeli is well known for its pies. One of them is the Macaroni Pie.
Ingredients for the Macaroni Pie
- A packet of macaroni No5 with a hole
- 3 eggs
- 400 gr of feta cheese
- 450 gr of “anthotyro” cheese
- 200 gr of trimmed semi-hard cheese
- 1 packet of pastry sheet
- 1 glass of milk
- 100 gr of olive oil
- 1 tablespoon of butter
- fresh pepper
Method & Directions
Boil the macaroni for about 8 minutes in salted water. When they are ready, remove them from the fire and strain them.
Let them get colder by putting them under the tap, put them back in the pot and oil them over.
In a big bowl trim the feta cheese and the “anthotyro cheese”. Add the semi-herd cheese, the milk and the pepper. Whisk the eggs and pour them in the bowl. Stir all the ingredients very well until they are all homogenized, add the macaroni and keep stirring for a while.
Then, oil up a baking dish and spread 5 pastry sheets on it. One by one needs to be oiled up with a brush. Spread the macaroni on the baking dish, lay another 6 oiled pastry sheets, one by one to cover our pie.
When we finish the process, turn around the pastry sheets and lay them inwards. Etch the macaroni pie and add little pieces of fresh butter.
Bake our pie in a preheated oven at 200 degrees for about 50 minutes.
There are three different kinds of cheese, so be aware of the amount of salt you add. Normally, I don’t add salt at all.
